Homemade Apricot Bread A Simple Yeast Dough Recipe

This yeasted Apricot Bread is sweet and tart with a great apricot filling. Sprinkling sliced apricots on top before baking. After baking, apricot jam is brushed on. Serve this tasty bread with tea or coffee.

FOR THE DOUGH – 1 cup whole milk – 1 1/2 ounce envelope active dry yeast – ¼ cup warm water – 3 Tablespoons granulated sugar – 2 egg – ¼ cup unsalted butter – 4½-5 cups all-purpose flour – ½ teaspoon salt FOR THE FILLING – ½ dried apricot – ½ cup fresh apricot – ½ cup orange juice – 6 Tablespoons unsalted butter – ½ cup sugar – ¼ all-purpose flour FOR THE TOPPING – 2 Tablespoons unsalted butter – ½ cup apricot jam – ½ cup sliced almond

Make dough Milk should boil briefly in a small saucepan over medium heat. Cool to room temperature after cooking. Meanwhile, sprinkle yeast over warm water in a large bowl. Add 1 T sugar and foam for 5 minutes.

Add eggs, butter, and 2 tbsp sugar. Add chilled milk. Scrape bowl as you add flour and salt for soft dough.If sticky, add more flour to the dough on a floured surface. Knead 10 minutes to smooth. Soft dough.

Grease a big bowl. Put dough in bowl. Wrap in plastic and let sit in a warm place for 1 1/2 hours to double. Soak apricots in orange juice and limoncello while dough rises. If you like the taste, use it!)

TO FILL Mix butter and sugar in a bowl until fluffy. Remove apricots from juice. Keep juice. Mix apricots and flour with butter/sugar.Dough punchdown. Roll the dough into a 10-by-18-inch rectangle on a floured surface. Spread apricot mixture on dough, leaving 1-inch sides.

Brush borders with water. Roll the dough tightly into an 18-inch log toward the clean border; pinch the seam to seal. Trim the ends. Place the ends in a small loaf pan or baking spray-sprayed muffin tin.

On baking sheet, place roll seam-side down. Splitting the log in half creates two. A chef's knife cuts the first log in half lengthwise.Twist and cross halves several times. Pinch and tuck ends under loaf. Place carefully in the first parchment-lined loaf pan.

Preheat oven to 350. Butter loaves and rolls after uncovering. Sprinkle almonds.For golden brown bread, rotate the baking sheet halfway through 30–35 minutes. Early rolls are possible. Brush rolls with melted butter.Warm apricot jam and orange juice while bread bakes.
